Hide these ice-lollies from the kids! This time, the adults need to have something to enjoy over the holidays and the hot summer days.
Reaching for a gin & tonic has fast become the chosen drink of choice for many, and with the heat setting in, these lollies make the perfect alternative to cool down to while relaxing in the pool or enjoying a braai with friends.
Are you ready to give our gin & tonic ice-lollies a go?
Ingredients:
50g castor sugar
50ml water
100ml gin
100ml lemon or lime juice
600ml tonic water
10 lemon or lime slices
Instructions:
To make the syrup: Pour the sugar and water in a saucepan and gently heat until the sugar has dissolved, then set aside to cool.
Mix the gin, lemon or lime juice, tonic water and the syrup in a bowl. Divide the mixture into lolly moulds with a little space at the top to allow for expanding.
Freeze for about an hour or until semi-frozen then push the sticks into the moulds as well as a slice of lemon or lime. Return to the freezer to freeze for a few more hours or overnight.
When you’re ready to enjoy, run the ice-lolly mould under some warm water to loosen them before tucking in.
You could even swop up your tonic water for pink tonic, your gin for rose gin, and the lemon or lime for pomegranates for a different taste altogether.
