Easy lemon pound cake

Pound cake is always a winner and can be adapted in so many different ways! Add funfetti for the kids or a shot of lemoncello for the adults. Add a glaze and top with lemon zest. Give it a go!

INGREDIENTS

½ cup butter, melted

1 cup sugar

2 eggs, well beaten

1 tablespoon lemon juice

¼ teaspoon salt

1 ½ cups flour

1 teaspoon baking powder

½ cup milk

½ lemon juice

¼ icing sugar

METHOD

Mix together 1 cup sugar and melted until well blended.

Add your eggs and 1 teaspoon of lemon juice and mix well.

Add the salt, flour, and baking powder to the mixture and stir well, add the milk once your mixture is smooth and mix again.

Spoon your mixture into a lined baking loaf and bake at 180 degrees Celsius for 1 hour, or until golden brown.

Mix ½ cup lemon juice and ¼ icing sugar and rest while you pound cake bakes.

Once your cake is ready, remove from your loaf pan and rest it on a tray. Poke holes in the top and drizzle your glaze over your cake.

Serve warm or cold with whipped cream!
